Easy but very tasty Broccoli and Stilton Soup

Lets face it most of us buy far too much food at Christmas and then are desperately trying to use it up in January.  I am a sucker for cheese and biscuits over the Christmas holidays and the smellier the cheese the better.  I cant get enough of Stilton cheese on a Hovis biscuit!  However this does mean that I normally buy far too much cheese and have some left in the fridge in January.  I am always on a health kick at the start of the year to work off all the extra food I consumed over the holidays.  Eating the cheese in this broccoli and stilton soup feels a lot more guilt free than having it with biscuits and a glass of port 🙂 .

There are lots of health benefits to Broccoli and it is a great source of vitamin K and C.  Another great reason to cook and eat this yummy soup.  Make the most of the broccoli and be sure the cut up and use the stalks too.

This broccoli and stilton soup is really easy and straight forward to make but tastes really good!  It freezes well too so I made extra and it will make a quick lunch another day.

Broccoli and Stilton Soup

You will need –
Serves 4

2 tbsp Oil or low calorie cooking spray
1 Onion, finely chopped
1 Stick of celery, sliced
1 Leek, sliced
1 Medium potato, diced
1 Litre of vegetable stock
1 Head of broccoli, chopped
140g Stilton cheese, crumbled

What to do –

Heat the oil or low calorie cooking spray in a large saucepan and add the chopped onion.  Cook until the onion is soft.

Add the sliced celery and leek and the diced potato.  Stir and cover with a lid and allow to sweat for 5 minutes.

Pour in the vegetable stock and add any chopped broccoli stalks.  Cook for 10 to 15 minutes until all the vegatbles are soft.

Add the rest of the chopped broccoli and cook for another 5 minutes.  Use a hand blender to blitz the soup until smooth.  Finally stir in the crumbled stilton and season with pepper.  Serve this delicious broccoli and stilton soup with a slice of wholemeal bread for a yummy filling lunch.

Pub Review – The Old Lion Harborough Magna, Warwickshire

On a recently holiday to North Wales we made a stop at The Old Lion Harborough Magna to break up the long journey home.  This pub is located in the small Warwickshire village of Harborough Magna near Rugby and what a find it was!

The Pub

It has a large outside patio area with lots of seating, great on a nice sunny day.  The décor inside is smart, clean and modern.  I loved all the pictures of Lions hanging around the restaurant.

There were lots of nice touches such as blankets to use outside to keep you warm.

The Menu

They have a great varied menu of meat, fish, burgers, steaks and a number of stone-baked pizzas.  They also have a set lunch time menu or sandwiches.  The kids menu had a choice of mains for £5 and a dessert for £2.50.  It was hard to decide what to choose so we shared a chicken burger and a pizza.  The food was really good!

I would definitely recommend one of their fresh dough, hand stretched, stone-baked pizzas!  We went for the American Hot one.  We also saw their sandwiches being served and they looked amazing.

The children also went for pizza which gets served with a choice of two sides.

The kids get to choose ice cream or fairy cakes to decorate for dessert.  My daughter immediately went for the fairy cakes!  I think this is a great idea.  They get two fairy cakes topped with icing and some marshmallows to decorate them with.  Amelia really enjoyed that part.

Would also recommend the Baked Alaska from the dessert menu!

Final Thoughts ….

Overall we had a lovely experience eating at The Old Lion Harborough Magna.  There is a good selection of food on the menu and it was all presented well and tasted great.  I would say its a little pricier than your average pub menu but I think the quality of food deserves it.  The lunch time menu however seems good value for money.  Well behaved dogs are allowed in the bar area.
